The meat of the guinea fowl is white and moist, similar to chicken, but they are higher in protein and low in fat. Guineas have a high yield of meat (50% meat / 50% carcass) and fewer tendons in the leg and thigh area than other game birds like pheasant, making them both cost effective and flavorful. The hens are approximately 3.5-4 pounds each.
