Located just north of the Catskill Mountains, Cooperstown Cheese Company has consistently produced some of New York's greatest table cheeses. The cheesemakers, Sharon and Bob Tomaselli, use only milk from local dairies. Milk for Toma cheeses come from Brown Swiss cows that are raised naturally and without hormones on Sunny Acres Farm and milk for Jersey Girl cheese comes from Stone House Farm in Sharon Springs , New York, also all natural and hormone free and also grass fed. The cheeses age in one of Cooperstown's three caves, where the temperature and humidity are carefully controlled.
